Cauliflower Rice Recipe

Hey people! It's Phoebe. I have a recipe for you that I saw on the internet for cauliflower rice which, once cooked, looks like regular rice, tastes fantastic, and may have little kids fooled into eating their veggies.

All you'll need is:

1 Head of Cauliflower

A Bit of Olive Oil

Salt and Pepper for Tasting

Optional: A Bit of Butter

1) Start by cutting the cauliflower into lots of small chunks.

2) Put the chunks into a food processor and process until the texture is pretty close to cuscus or rice.

3) Heat a skillet to medium-high heat and pour the oil onto it (just enough to thinly coat the pan). Then add the cauliflower.

4) Sprinkle on salt and pepper. Add a bit of butter if wanted to soften the cauliflower more and add flavor.

5) Keep the cauliflower on heat, stirring occasionally, for about 7 minutes (or until the cauliflower is soft and looks very much like rice).

6) Enjoy! You can serve this as a healthy substitute to rice with your burritos, stir-fry, or as a snack!

Whether you want to find a way to get vegetables into your kid's belly or if you just want a healthy but yummy rice for yourself, this is a great recipe and I would say it can be done in 15 minutes tops.

CREATIVE ADDITIONS: If you have a little more time to experiment, try adding some curry powder or cumin or garlic powder to your "rice" to make the (somewhat bland) vegetable packed with flavor. You could also cook the "rice" with squash or zucchini or something like that for a nice fall variation.
